The reason for my diet disaster this week! I made these gorgeous cookies on Sunday afternoon with my daughter and they never fail to turn out perfectly. I found the recipe in Tana Ramsay’s “Family Kitchen” cookbook, which is one of my favourite cookery books. I’m a self confessed cookbook whore and this one appealed to me when it first came out because it is a book by a mother writing family friendly recipes. Tana has four children, and didn’t really have much of an interest in food until her eldest child started eating solids and since then started experimenting in the kitchen, the result of which is the afore mentioned “Family Kitchen” and several other books I can’t wait to get my hands on.
The recipes are created with the family in mind and she includes tips to make the recipes more adult friendly too, with the addition of extra seasoning or a glug of wine. Along with the cookies, my favourite recipes are ham and cheese muffins and danish pastry pizzas which are a firm favourite for the school lunchbox, roasted sweet tomato and sweet pepper soup which is comfort in a bowl on a cold day, cauliflower and broccoli cheese which is delicious with the suggested addition of bacon and chicken thighs with pasta, bacon and cherry tomatoes for a Mediterranean feel.
Needless to say I love the book and am ever so slightly jealous of Tana’s ability to work, look after four kids and her gorgeous hubby (yes I have a thing for Mr Ramsay!) and look effortlessly beautiful at all times – me jealous!?! But without further a do, onto the recipe:
300g milk chocolate (I used white chocolate this time and they were utterly delicious, and dark chocolate is just as nice too!)
200g softened unsalted butter
100g caster sugar
150g soft light brown sugar
300g plain flour
1 tsp vanilla essence
1 tsp bicarbonate of soda
1. Preheat the oven to 180C/Gas 4
2. Lightly grease a baking sheet
3. Break the chocolate into small chunks
4. Beat together the butter and sugars until light in colour
5. Beat in the eggs
6. Add the flour, vanilla essence and bicarbonate of soda and stir in the chocolate chunks
7. Spoon mounds of the mixture onto the baking sheet, leaving space for them to spread
8. Bake for 10 – 15 mins until golden
9. Remove from the oven and leave for 10 minutes as they will continue to set as they cool before placing on a cooling rack.
This recipe makes 40 cookies, and that’s no understatement!:
These cookies are chewy and crunchy in equal measure, I love mine still warm from the oven and madam enjoyed hers with a glass of milk while recuperating from her op on the sofa!
