Pepperonata

This is gorgeous, makes a lovely accompaniment to meals, a sauce for chicken or beef, is great on jacket potatoes or you can crack eggs into it and cook in the oven for huevos rancheros. Plus it’s free if you’re following the Slimming World diet so you can eat as much as you fancy!

Ingredients

2 onions, sliced
3 cloves garlic, finely chopped
2 red peppers, sliced
2 green peppers, sliced
2 tbsp tomato puree
400g can shopped tomatoes
500g tomatoes, peeled, deseeded and chopped
Frylite

Directions

  1. Heat a pan and fry the onions in frylite until cooked.
  2. Add the garlic and stir
  3. Add the peppers and simmer for 10 minutes
  4. Add the tomato puree and tomatoes and stir
  5. Cover and simmer for 30 – 40 minutes or pop into the oven at 180/gas 4 for the same length of time
