Meal Planning Monday

Last week I decided that I’d be taking my meal planning a little more seriously. I’m guilty of planning meals, not bothering to cook them and then binning the ingredients when they subsequently go off. I’m spending way too much on my food shop each week and we never seem to have just a quick and easy meal. That is all going to change starting this week. So here’s what we’ll be eating:

Monday

Cheese and onion pie – I’m going to give meat free Monday’s a go in an effort to cut down on our food bill. We need to eat more fruit and veg and this will hopefully help too. I’ve never had cheese and onion pie before so this Slimming World recipe is just what I’m after to help me not only save money but stick to my diet too.

Tuesday

Sausage and mash

Wednesday

Soup and cheesy toast – it’s Scouts night and I always end up cooking while the tween is at Scouts. This way I can cook it while she’s at school, she can eat before she goes and by making cheesy toasted baguettes with the soup it’ll be filling enough to stop the man moaning he’s not had a ‘proper dinner’ too.

Thursday

Meatball pasta bake – I found this one on a calendar that came free with the latest issue of Slimming World Magazine, but it looks like it’s already an old favourite with Emma from A Matter of Choice.

Friday

Loaded jacket potatoes – another one my other half will no doubt class as ‘not a proper meal’, but I used to love them as a kid, when you scoop the insides of the jacket potato out and mash them with cheese, ham, veg etc.

Saturday

Chicken Jalfrezzi

Sunday

Home made pizzas – the kids love making and topping their own pizzas together, so it means I get the day off cooking and they can have fun in the kitchen. I’ll get them to make me a diet friendly pizza using a wrap though.

    I love Loaded Jackets!!! It is a real meal… so tell your other half I said so!

    I really should get my meal plan up… *scurrying off to add it to the list of posts I need to write*

    Everything sounds great!
    We love Loaded jacket potatoes but haven’t had them in ages….It might be something for us next week x

    I love the idea of loaded jacket potatoes, they sound fantastic! Do you cook the potatoes in the oven first? I do like a crispy skin!

      I usually microwave the potatoes first, then oven bake them, split them, scoop the flesh out and mix it with cheese, ham, veg etc and stuff it back in then pop them back in the oven to make sure they’re all crispy and oozy inside – yum!

    Sounds good, sometimes you get out of the habit but it’s always good to re-focus, I’ve just decided to so the same last week. X
